We had some friends over to stream the Phish show from MSG on the 30th. For the occasion, I made nachos three ways. Above, is vegetarian bean nachos with a four layer dip for any bare chips. Below, is a taco beef/black bean/red salsa version.
The best of the bunch was the version topped with carnitas, refried beans and roasted tomatillo salsa that we had prepared in the slow-cooker the day before. Yum.
Chase stayed up late to watch much of the concert. He was mezmorized by the light show... but weren't we all...
